This impressive Grand Cru exhibits a thrilling tension the nerviness of Chablis and the full, succulent richness and concentration arising from its supremely well-situated vineyard. For a similar price to a village Puligny or Meursault, this noble wine offers exceptional value for money. The Bougros site is situated at the extreme west/south-west of the seven Chablis Grands Crus. This cuve of Bougros comes from vines located at the top of the slope, giving ideal drainage, exposure to sunlight and a little freshness from the altitude. The wine's natural power is realised by fermention and ageing in oak barrels with regular stirring of the yeast lees ('batonnage'). The coolness of the Defaix cellars renders unnecessary artificial cold stabilisation, with tartrate crystals naturally precipitating over the winter. After 18 months' maturation, the wine is bottled with just a light filtration.
