Filey Bay STR Finish whisky is matured first in ex-bourbon casks, which bring delicious creamy notes toThe Spirit of Yorkshire'slight and fruity spirit style, they then move the whisky into an STR cask for a second maturation period.STR casks are ex-red wine casks that have been Shaved, Toasted and Re-charred, creating the perfect environment fortheir light and creamy whisky to draw out the delicious red fruit flavours from the wood.. This way of treating red wine casks (STR) was pioneered by the late, great Dr. Jim Swan who assisted thedistillery as they got up and running. Treating the casks in this way tempers the tannins in the red wine casks and allows the flavour inside the wood to really come to the fore.. Light, Floral & Fruity.
