Made with heritage rye grains (a distillery speciality)it has beenaged in six American Oak casks with different origins, toasts, and sizes (130L and 225L) which adds a beautifully complexity.. This is a bright, spicy and herbal whisky. Notes of sticky ginger cake, old books and ripe banana mingle with creamy custard, salty roasted nuts and toffee.. With only 1428 bottlesproduced, this fourth bottling is the highest proof to dateat 51.3%augmenting thebig, bold flavours.A double-distillation in bespoke stills, brings toasty sourdough smokiness, beautifully combined with sweet vanilla and toffee notes.. The organic heritage grain was grown in sandy soils just 7 miles fromthedistillery. This includedmultiple ancient heritage rye strains, wheat strains and even some oats and a few thistles! This mix givesthe whisky its unique, signature flavour..
